Catuai Natural — juicy, sparkling, cherries, fruity. Cup score: 90

Catuai Washed — creamy and smooth. Cup score: 87.5

Bourbon Washed — red apple, sweet, medium-bodied, plum, black tea. Cup score: 88.5

Maragogipe Natural — buttermilk, sweet, juicy. Cup score: 89.25. Balloon-fermented 24-48 hours in sealed glass vessels for a clean, semi-anaerobic fermentation with layered sweetness and a silky structure.

All coffees: Chiriqui Province, Panama. Roasted to order in small batches. Whole bean, 6 oz (170 g).
