Our Caturra and Catuai coffee was harvested at Finca Candela starting in October of 2024 through February of 2025. During this time, the red cherries are carefully harvested daily. At the end of the picking day, the coffee cherries remain overnight in white bags. The cherries are given a short fermentation which enhances the sweetness, citrus, and sugar cane flavors. The following day at 5 am, the wet milling process begins. It takes 3-4 hours to remove the outer skin and pulp and fully wash the coffee to remove any remaining fruit and mucilage. Now in their parchment husk, the coffee is moved to the dryers for approximately 3 days. The coffee is then ready to be stored in the warehouse.
