ALE is a plot located in the MIMA ESTATE farm in Alto Quiel at the foothills of the Baru Volcano, at an altitude of 5900 feet above sea level. It covers an area of approximately 2.5 hectares of volcanic soil where Geisha Green Tip grows. During the rainy season, the daytime temperature is around 18 degrees Celsius, and it drops to 12 degrees Celsius at night. This plot is managed with 50% of shade, which impacts the production and attributes of this coffee. It was manually harvested on February 5th, 2025 ensuring the complete ripening of the cherries. After harvesting, it was taken to our processing facility in Alto Lino Boquete, where it underwent a flotation process to separate low-density beans. Subsequently, it was mechanically pulped and transferred to fermentation tanks with mucilage. During the night, the temperature drops to 15 degrees Celsius, and it rises to around 20 degrees Celsius the next morning. This fermentation process was carried out using the wild yeast naturally present in the cherries from the farm. Fermentation lasted 24 hours. It was then washed with pressurized water; no abrasive methods were used for this purpose. The coffee is dried in our greenhouse under the sun on African beds for approximately 7 days. The coffee then enters our resting warehouse with controlled temperature and humidity.
