About This Coffee
Typica Variety Honey Processed - TAL
We start with optimally ripe cherries, handpicked at peak maturity. The honey process begins by selectively removing part of the mucilage after pulping, while carefully preserving the sugary layer that contributes to the coffee’s complexity. After this the coffee was dried on African beds for 12-15 days, ensuring airflow and even drying. To homogenize the process the coffee was given a final touch in a dark room.
